Ingredients

Zucchini Preparation

  • 2 medium zucchinis, sliced into 1⁄4-inch rounds

Cheese and Drizzle

  • 6 ounces soft, spreadable goat cheese

Instructions

Preparation

  • Preheat your grill pan or skillet over medium heat.
  • Brush both sides of the zucchini slices with olive oil and sprinkle with sea salt and black pepper.
  • Grill the zucchini for about 2 minutes on each side until tender and slightly charred.

Almond Thyme Honey Drizzle

  • In a small saucepan, gently warm the honey over low heat.
  • Stir in the toasted almonds and fresh thyme leaves.
  • If using, add the crushed red pepper flakes, let it simmer for about a minute, then remove from heat.

Assembly

  • Spread a generous layer of goat cheese on half of the grilled zucchini slices.
  • Stack another zucchini slice on top, creating layers. Repeat until you have 2 or 3 layers.
  • Drizzle the warm almond thyme honey over these stacks.

Serving

  • Garnish with extra thyme leaves and toasted almonds. Serve warm or at room temperature.

Notes

Grilling the zucchini is important for flavor, but a regular pan will work fine. Let goat cheese sit at room temperature for enhanced creaminess. For variation, consider using different nuts or herbs.
