Instructions

Preparation

  • Slice the zucchinis into 3-inch long, 1/2-inch thick strips.
  • In a bowl, beat the eggs along with a pinch of salt and ground black pepper until well combined.
  • On a large plate, mix the panko bread crumbs and grated Parmesan cheese.

Coating and Baking

  • Dip each zucchini strip into the egg mixture, allowing the excess to drip off before pressing it into the panko mixture to coat.
  • Arrange the coated zucchini strips in a single layer on the prepared baking sheet.
  • Bake for approximately 20-25 minutes until they are golden brown and crispy.
