Instructions

Cooking the Shrimp

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Once the oil is hot, add the peeled and deveined shrimp, cooking for 2 to 3 minutes on each side until they become pink and opaque. Remove from heat and set aside to cool slightly.

Preparing the Dressing

  • In a small mixing bowl, combine the lime juice, lime zest, chili powder, ground cumin, salt, black pepper, and the remaining tablespoon of olive oil. Whisk until a smooth dressing is formed.

Chopping the Ingredients

  • While the shrimp cools, dice the avocado, halve the cherry tomatoes, slice the red onion thinly, and roughly chop the cilantro.

Bringing It All Together

  • In a large mixing bowl, combine the cooked shrimp, diced avocado, halved cherry tomatoes, sliced red onion, and chopped cilantro. Drizzle the dressing over the salad and toss gently.
