Ingredients

For the Salad

  • 1 lb shrimp, peeled and deveined Use fresh or thawed frozen shrimp.
  • 2 avocados, diced Add lime juice immediately after cutting to prevent browning.
  • 1 lime, juiced Use for marinating shrimp and dressing the salad.
  • 1 small red onion, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped Can substitute with parsley or green onions.
  • Salt and pepper to taste
  • tbsp Olive oil For cooking and drizzling.

Instructions

Preparation

  • In a bowl, combine the shrimp, fresh lime juice, salt, and pepper. Allow the shrimp to marinate for 15 minutes.

Cooking

  • Heat olive oil in a skillet over medium heat. Add the marinated shrimp and cook until they turn pink and opaque, about 2-3 minutes per side.

Combining

  • In a large bowl, gently combine the cooked shrimp with diced avocado, red onion, halved cherry tomatoes, and chopped cilantro.

Serving

  • Drizzle with additional lime juice and olive oil to taste. Toss gently to avoid mushing the avocado. Serve immediately.

Notes

For a spicy kick, add diced jalapeƱos. If serving later, keep the avocado separate to prevent browning. This salad pairs well with light white wine or sparkling water.
