Puff Pastry

Instructions

Preparation

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.
  • Cut each sheet of thawed puff pastry into three equal rectangles. Place them on the prepared baking sheet. Prick each rectangle with a fork to ensure they don’t puff up too much while baking.
  • Brush the tops with beaten egg to achieve a beautiful golden color. Bake for 12-15 minutes until the pastry is golden and puffed. Let them cool completely on a wire rack before dusting with powdered sugar.

Making the Mousse

  • Melt the chopped white chocolate in a heatproof bowl over simmering water, stirring until smooth. Allow it to cool slightly.
  • In another bowl, whip the heavy cream with vanilla extract and 1 tablespoon of powdered sugar until soft peaks form.
  • Gently fold in the cooled white chocolate until the mixture is combined. Chill in the fridge for about 20 minutes.

Assembly

  • Begin layering your dessert by placing one piece of puff pastry on a serving plate. Spread a layer of mousse and then add a layer of fresh sliced strawberries.
  • Repeat this process, creating two more layers. Top off the final layer with more mousse and finish with sliced strawberries.
  • If desired, garnish with white chocolate shavings and mint leaves.

Notes

To ensure your pastry layers are extra flaky, make sure not to overwork the dough when cutting. Use the freshest strawberries available to greatly enhance the overall flavor of the dish. For presentation, use a serrated knife to clean up the edges of the puff pastry.
