Instructions

Preparation

  • Heat olive oil in a pot over medium heat.
  • Add the diced onion and sauté for about 3 minutes until softened.
  • Stir in minced garlic and cook for an additional 20 seconds.
  • Add kosher salt, ground cumin, dried oregano, black pepper, and crushed red pepper flakes. Cook for 1 minute while stirring frequently.

Cooking

  • Pour in the chicken broth and add in the diced green chiles. Simmer uncovered for 10 minutes.
  • Add the chopped rotisserie chicken, cannellini beans, cubed cream cheese, and lime juice. Stir and cook until the chili is warm and creamy.
  • Serve in bowls, topped with shredded Monterey Jack cheese, diced scallions, chopped cilantro, sliced avocado, and crushed tortilla chips if desired.
