Instructions

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a mixing bowl, toss the hulled and halved strawberries with balsamic vinegar, honey, and freshly ground black pepper.

Roasting Strawberries

  • Spread the coated strawberries onto a parchment-lined baking sheet in a single layer.
  • Roast them in the oven for about 15-20 minutes, or until the strawberries are soft and caramelized.
  • Remove them from the oven and let them cool.

Whipping Feta

  • In a food processor, blend the crumbled feta cheese, softened cream cheese, olive oil, lemon juice, and a pinch of black pepper until smooth and creamy.
  • Add more olive oil if you prefer a looser consistency.

Serving

  • Spread the whipped feta onto a serving plate, creating a lovely swirl.
  • Spoon the roasted strawberries over the top and drizzle with more olive oil.
  • Sprinkle with freshly chopped basil or mint and optional black sesame seeds.

Notes
