Ingredients

For the Whipped Feta

For the Roasted Grapes

  • 1.5 Cups Red Seedless Grapes Juicy and sweet, perfect for roasting to bring out their natural sugars.
  • 1 Tsp Olive Oil For tossing the grapes, enriching their flavor.
  • Pinch of Salt Elevating all the taste elements.

For the Assembly

  • 3 Tbsp Walnut Halves Toasted for that crunchy, nutty goodness.
  • 1.5 Tbsp Hot Honey An intriguing blend of sweetness and heat, or equal parts honey and a pinch of chili flakes.
  • Optional: Fresh thyme leaves or chili threads for garnish.
  • Warm Pita, Baguette Slices, or Seeded Crackers The perfect accompaniments to scoop up the delicious whipped feta.

Instructions

Preparation

  • Preheat your oven to 200°C (390°F).
  • In a mixing bowl, toss the red seedless grapes with 1 teaspoon of olive oil and a pinch of salt. Spread them on a baking sheet and roast for 15–18 minutes until blistered and juicy.
  • In a blender, combine the feta cheese, Greek yogurt (or sour cream), lemon juice, olive oil, and cracked black pepper. Blend until smooth and creamy.
  • Toast the walnut halves in a dry pan on medium heat for about 4-5 minutes until fragrant and lightly browned.

Assembly

  • Scoop the whipped feta into a shallow bowl.
  • Top it with the roasted grapes and their juices, then scatter the toasted walnuts over the top.
  • Drizzle using hot honey for a kick, and garnish with fresh thyme leaves or chili flakes.
  • Serve with warm pita, baguette slices, or seeded crackers.

Notes

Ensure quality feta cheese for best taste. Don’t rush the roasting process; taste and adjust seasoning in the whipped feta as needed. For lighter versions, use low-fat Greek yogurt.
