For Assembling and Baking

  • 2 sheets puff pastry (thawed if frozen) Light, flaky, and perfect for creating a show-stopping presentation.
  • 1 egg for egg wash Helps achieve a gorgeous golden crust.
  • 4 tbsp honey Sweet and sticky, it serves as the irresistible surprise at the center.
  • 0.5 tsp chili flakes or hot sauce Add a touch of heat that balances the sweetness of honey.
  • sesame or nigella seeds for topping Adds a delightful crunch and visual appeal.

Instructions

Preparation

  • Preheat oven to 200°C (400°F) and line a large baking tray with parchment paper.
  • In a food processor, blend feta cheese, cream cheese (or Greek yogurt), and olive oil until smooth.
  • Stir in sun-dried tomatoes and herbs until evenly distributed.

Shaping the Flower

  • Roll out both pastry sheets into even circles, slightly larger than desired final shape.
  • Place the first circle on the prepared tray, spread feta mixture evenly, leaving a 1.5 cm border.
  • Place the second circle on top, create a bowl shape in the center, and cut 16 equal strips from center outward.
  • Twist each strip outward 2-3 times to form petals.

Baking

  • Brush the pastry flower with egg wash and sprinkle sesame or nigella seeds on top.
  • Bake for 20–25 minutes until puffy and golden brown.
  • Warm honey with chili flakes or hot sauce on low heat until combined.
  • Serve warm, drizzling hot honey over the pastry flower and garnishing with thyme and flaky sea salt.
