Instructions

Preparation

  • Prep the Zucchini by steaming or boiling the chopped zucchini for about 5 to 7 minutes until soft. Drain excess water and let it cool, then blend into a smooth purée.
  • Make the Chocolate Base by whisking together the cream, whole milk, cocoa powder, coconut or brown sugar, and sea salt in a medium saucepan. Cook over medium heat, stirring continuously until smooth and slightly thickened, around 5 minutes.
  • Remove from heat and mix in vanilla extract, melted dark chocolate, and zucchini purée to create a rich chocolate mixture.

Chilling and Freezing

  • Transfer the chocolate-zucchini mixture into a bowl, cover, and chill in the refrigerator for at least 3 hours.
  • Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until smooth and creamy.
  • Transfer to an airtight container and freeze for 2 to 4 hours to firm up.

Serving

  • Serve the ice cream in bowls or cones, topped with chocolate shavings or chopped nuts if desired.
