Ingredients

For the caramelized shallots

For the tarts

  • 2 tbsp Feta cheese, crumbled Creamy and salty, its texture is the heart of these tarts.
  • 1 sheet Puff pastry, thawed and cut into 4 squares Buttery and flaky, it’s the perfect cradle for the rich fillings.
  • 1 piece Egg (for egg wash) Gives the pastry a golden, buttery sheen.
  • Fresh thyme or rosemary (optional) Aromatic herbs that enhance the tarts’ flavor.
  • Olive oil, for brushing Adds a glossy finish and complements the savory notes.

Instructions

Preparation

  • Melt the butter in a skillet over medium heat. Add the thinly sliced shallots, brown sugar, balsamic vinegar, salt, and pepper. Cook for about 10 minutes until shallots are golden and tender.
  • Preheat your oven to 200°C (390°F) and line a baking tray with parchment paper.
  • Create a small pile of the caramelized shallots onto the prepared tray for each tart. Sprinkle crumbled feta cheese atop the shallots.
  • Place the puff pastry squares over each pile of shallots and feta, tucking the edges underneath to fit snugly.
  • Beat the egg and brush the tops of the pastries. Bake in the preheated oven for 18-22 minutes until puffed and deep golden brown.
  • Once baked, carefully flip each tart onto a plate, revealing the upside-down presentation. Garnish with fresh herbs and a drizzle of olive oil.

Notes

Allow the shallots to caramelize slowly for maximum flavor. Use cold puff pastry to achieve the best texture. These tarts can be prepared in advance and refrigerated or frozen before baking.
