Ingredients

Instructions

Preparation

  • Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.
  • In a medium bowl, combine Oreo crumbs with melted butter. Press into the bottom of the prepared pan to form a crust. Bake for 10 minutes and cool completely.

Cheesecake Filling

  • In a large mixing bowl, beat softened cream cheese until smooth. Gradually add granulated sugar, mixing well.
  • Add sour cream and vanilla extract, mixing until combined.
  • Incorporate eggs one at a time, mixing thoroughly after each addition.
  • Sift in cocoa powder and red food coloring, mixing until color is uniform. Fold in crushed Oreos and diced strawberries.
  • Pour cheesecake batter over cooled crust and spread evenly.
  • Bake for 60-70 minutes or until center is set. Let cool in the oven with the door slightly ajar for about an hour.
  • Chill in refrigerator for at least 4 hours or overnight.

Ganache and Decoration

  • Combine white chocolate chips and heavy cream in a microwave-safe bowl. Heat in 30-second intervals, stirring until smooth. Add pink food coloring, mixing thoroughly.
  • Drizzle pink ganache over chilled cheesecake. Top with whipped cream, fresh strawberries, edible glitter, and unicorn decorations.

Notes

Use room temperature ingredients for a smoother batter. The cheesecake can be made a day ahead to allow flavors to meld. Pair with vanilla ice cream or fresh fruit for added experience.
