Instructions

Preparation

  • Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  • In a bowl, combine graham cracker crumbs and melted butter. Press into the bottom of the pan and bake for 10 minutes. Cool completely.
  • Melt white chocolate chips and sweetened condensed milk in a bowl in 30-second intervals until smooth. Divide and add pink and blue food coloring separately. Pour pink fudge over the crust, chill for 30 minutes, then repeat with blue fudge.
  • Beat cream cheese until smooth, add sugar, sour cream, and vanilla; mix well. Add eggs one at a time, beating after each.

Baking and Cooling

  • Pour cheesecake batter over fudge layers, smooth it out, and bake for 60-70 minutes until the edges are lightly browned and the center is set.
  • Turn off the oven and let it cool inside for 1 hour with the door ajar.
  • Refrigerate for at least 4 hours or overnight before removing from the pan.
