  • 0.5 teaspoon salt Balances the sweetness.

  • 0.5 cup unsalted butter, softened Combines with cream cheese for a luscious frosting.

Instructions

Preparation

  • Preheat the Oven: Set your oven to 350°F (175°C). Prepare two 9-inch round cake pans by greasing and flouring them to prevent sticking.
  • Mix Dry Ingredients: In a large bowl, combine the flour, granulated sugar, baking powder, baking soda, and salt. Whisk until well mixed.
  • Combine Wet Ingredients: In another bowl, beat the softened butter until creamy. Add in the buttermilk, eggs, and vanilla extract. Mix until the mixture is well combined and smooth.
  • Blend Dry and Wet Ingredients: Gradually add the dry ingredients mixture to the wet ingredients. Stir until just combined—be careful not to overmix, or you’ll lose that delightful fluffiness.
  • Add Color: Add purple gel food coloring a few drops at a time to achieve your desired shade. Mix well after each addition.
  • Divide and Bake: Pour the cake batter evenly between the prepared pans. Bake for 25-30 minutes, checking for doneness with a toothpick; it should come out clean.
  • Cool the Cakes: Once baked, allow the cakes to cool in their pans for about 10 minutes. Then, transfer them to wire racks to cool completely.

Frosting and Assembly

  • Prepare the Frosting: While the cake cools, make the frosting. Beat together the cream cheese and butter until creamy. Gradually add in powdered sugar and vanilla extract until smooth.
  • Assemble: Frost and stack the cooled cakes. Spread a layer of frosting between each cake layer and then cover the outer layer with frosting.
  • Decorate: For that extra touch of elegance, decorate with optional edible flowers or sprinkle some purple sprinkles on top of your frosted cake.

Notes

For best results, make sure all ingredients are at room temperature before mixing. This helps to create a smoother batter and a more even bake. If you want a deeper purple color, don’t hesitate to add more gel food coloring. Allowing the frosted cake to set in the refrigerator for a bit before serving can enhance the flavors even further.
