Instructions

Preparation

  • Mix the softened butter with the minced garlic. Spread this mixture generously on one side of each slice of bread.

Cooking

  • Heat a small pan over medium heat. Add the diced bell peppers along with a pinch of salt and pepper. Sauté for about 2 minutes.
  • Take two slices of prepared bread (buttered side down) and layer with half of the shredded cheese, sautéed bell peppers, fresh parsley, and remaining cheese, then top with other two slices (buttered side up).
  • Heat a non-stick skillet or griddle over medium heat. Grill the sandwich for 3-4 minutes on each side.
  • Remove from heat, slice in half, and serve warm.

Notes

Try adding avocado or fresh spinach for extra flavor. For a crunchier texture, sprinkle grated Parmesan cheese onto the butter before grilling.
