Instructions

Make the Chicken Skewers

  • In a large mixing bowl, combine the extra virgin olive oil, chopped shallot, garlic, oregano, chipotle chili powder, honey, harissa sauce, lemon zest, salt, and pepper. Mix thoroughly.
  • Add the chicken chunks, ensuring each piece is well coated. Let it marinate for about 10 minutes.
  • Preheat the oven to 450°F (230°C). Prepare the baking sheet with parchment paper or lightly grease it.
  • Thread the marinated chicken onto skewers and bake for about 20–25 minutes, until cooked through and slightly charred.

Make the Feta Fries

  • In another bowl, toss the cut russet potatoes with olive oil, garlic powder, cayenne pepper, and salt until well coated.
  • Spread the seasoned potatoes in a single layer on a baking sheet and bake for 15–20 minutes. Flip the fries and bake for another 15 minutes until crisp.

Prepare the Herb Feta Topping

  • Combine mixed herbs, grated garlic, lemon zest, toasted sesame seeds, and crumbled feta in a small bowl.
  • Sprinkle the herb mixture over the fries and toss for even coverage once they are out of the oven.

To Serve
