Instructions

Preparation

  • Preheat your oven to 325°F (165°C). Grease a 9-inch springform pan.
  • In a medium bowl, combine chocolate cookie crumbs, sugar, and melted butter. Press into the bottom of the springform pan.
  • In a large mixing bowl, beat cream cheese and sugar until smooth and creamy.
  • Melt semisweet and milk chocolate chips together and let cool slightly before adding to cream cheese mixture. Mix until combined.
  • Add eggs one at a time, beating well after each addition, then stir in vanilla extract.

Baking

  • Pour the cheesecake mixture over the crust, smoothing the top.
  • Bake for 55-60 minutes, until the center is almost set but slightly jiggly. Let cool on a wire rack for 10 minutes.
  • Run a knife around the edge of the pan and let cool completely before removing the sides.

Ganache Preparation
