  • 3 oz feta cheese, crumbled Provides a creamy texture.
  • 1 cup extra-virgin olive oil, divided Adds richness.

  • 1/3 cup fresh parsley, chopped Adds freshness.
  • 8 cloves garlic, thinly sliced Enhances flavor.
  • 1 handful almonds, roughly chopped Provides crunch.
  • 1/2 tsp Aleppo pepper or chili flakes (optional) For a spicy kick.
  • Fresh bread, for dipping Choose warm and crusty bread.

Instructions

Preparation

  • In a small pan over medium heat, warm 3/4 cup of the olive oil until it’s shimmering.
  • Toss in the thyme sprigs and let them sizzle until the aroma fills your kitchen.
  • Add the chopped almonds and cook for 2–3 minutes, stirring occasionally until they reach a light golden color.
  • Stir in the sliced garlic and Aleppo pepper, cooking for 1 minute, ensuring not to burn the garlic.
  • Remove from heat, pour in the remaining 1/4 cup of olive oil, then add crumbled feta and chopped parsley. Use a fork to mash and blend everything together.
  • Transfer your dip to a serving bowl, providing fresh, warm bread for dipping. Enjoy!

Notes

For additional flavor, add a splash of lemon juice or lemon zest. For convenience, use pre-roasted almonds and garlic-infused olive oil. Leftovers can be stored in the refrigerator for up to five days.
