Ingredients

Instructions

Preheat and Roast Tomatoes

  • Preheat your oven to 200°C (390°F). Toss the cherry tomatoes with olive oil, balsamic vinegar, and a pinch of salt until well-coated. Spread them on a lined baking tray and roast for 15-20 minutes until soft and blistered. Set aside to cool slightly.

Prepare the Cheese Mixture

  • In a mixing bowl, combine the softened cream cheese, ricotta, shredded mozzarella, Parmesan, minced garlic, dried oregano, and season with salt and pepper. Mix thoroughly until smooth and creamy.

Assemble and Bake

  • Spread the cheese mixture evenly in a small oven-safe dish. Spoon the roasted tomatoes generously over the top. Bake in the oven at 190°C (375°F) for 20 minutes, or until bubbling and golden around the edges.

Garnish and Serve

  • Once baked, remove the dish from the oven and top it with fresh basil ribbons and a light drizzle of olive oil. Serve hot alongside toasted baguette slices or crispy crostini.

Notes

For a smoky flavor, consider adding a sprinkle of smoked paprika to the cheese mixture. Add finely chopped red chili flakes to the tomato mixture for heat. Fresh herbs like thyme or rosemary can enhance the flavor. To keep the dip creamy, do not overbake; just ensure it's heated through and bubbling.
