Ingredients

For the gnocchi dough

  • 300 g roasted sweet potato (mashed, cooled) Forms the base of your gnocchi.
  • 1 large egg yolk Adds richness and helps bind the dough.
  • 120-150 g all-purpose flour Provides structure for the gnocchi.
  • 1/2 tsp salt Enhances flavor.
  • 1 pinch nutmeg (optional) Brings warmth and depth to the dish.

For the fondue sauce

  • 1 tbsp butter Adds richness.
  • 1 tbsp flour Thickens the sauce.
  • 200 ml whole milk Creates a creamy texture.
  • 100 g Gruyère cheese, grated Adds a rich, nutty flavor.
  • 50 g Parmesan, grated Provides a sharp kick.
  • 1/2 tsp Dijon mustard Enhances taste.
  • to taste salt & pepper Essential for seasoning.
  • 20 g extra Parmesan (for topping) Creates a crispy topping.
  • 1 pinch paprika or black pepper Adds color and heat.

Instructions

Make the Gnocchi Dough

  • Mix the cooled, mashed sweet potato with the egg yolk, salt, nutmeg (if using), and flour in a large mixing bowl. Knead gently until the dough comes together, avoiding overworking it.

Shape & Cook the Gnocchi

  • Divide the dough into portions, roll each into long ropes, and cut into 2 cm pieces. Bring salted water to a boil and cook the gnocchi until they float, about 2-3 minutes. Use a slotted spoon to remove and set aside.

Prepare the Fondue Sauce

  • Melt butter in a medium saucepan over medium heat. Stir in flour to create a roux, then gradually add milk while whisking until smooth. Simmer until thickened. Remove from heat and mix in Gruyère, Parmesan, and Dijon mustard. Season with salt and pepper.

Assemble the Bake

  • In a greased baking dish, combine cooked gnocchi and fondue sauce. Toss until coated, then sprinkle remaining Parmesan and paprika/black pepper on top.

Bake to Golden Bliss

  • Preheat oven to 200°C (390°F) and bake for 15-20 minutes until bubbling and golden brown. Allow to cool for 5 minutes before serving, garnishing with fresh herbs if desired.

Notes

Avoid overworking the dough when making the gnocchi. You can customize cheeses and add veggies like sautéed spinach or kale for extra nutrition. Prepare the gnocchi and sauce ahead of time for convenience.
