Ingredients

For the Chicken

  • 1 lb chicken breasts, cut into 1-inch strips Boneless, skinless chicken breasts work best.

  • 2 tbsp rice vinegar
  • 2 cloves garlic, minced

For the Brussels Sprouts

  • 1 lb Brussels sprouts, halved Fresh Brussels sprouts are recommended.

Instructions

Marination

  • Whisk together the soy sauce, honey, rice vinegar, minced garlic, grated ginger, and red pepper flakes in a large mixing bowl.
  • Add the chicken strips, tossing to coat them evenly. Cover and refrigerate for 30 minutes, or for more flavor, up to 24 hours.

Roasting

  • Preheat your oven to 400°F (200°C).
  • Toss the halved Brussels sprouts with olive oil, salt, and black pepper, ensuring they are well-coated.
  • Spread them out on a baking sheet and roast for 15–20 minutes, flipping halfway through until they become crisp and golden.

Cooking the Chicken

  • Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
  • Remove the marinated chicken from the bowl (do not discard the marinade) and cook for about 2–3 minutes on each side until browned and cooked through.

Glaze (Optional)

  • If you want a thicker glaze, bring the leftover marinade to a boil in a small saucepan and simmer for 3–4 minutes until it thickens slightly.

Assembly

  • In each serving bowl, distribute the roasted Brussels sprouts and cooked chicken evenly.
  • Drizzle the teriyaki glaze over the top for added flavor.

Finishing Touches (Optional)

  • Sprinkle a handful of sesame seeds or chopped green onions over each bowl. Serve warm and enjoy!

Notes

For deeper flavor, consider marinating the chicken overnight. To enhance the dish, add bell peppers or carrots during roasting. Adjust honey for less sweetness if preferred.
