Ingredients

Main Ingredients

  • 250 g macaroni Short pasta that cooks quickly while providing a nice bite.
  • 200 g cooked chicken strips Tender chicken that adds protein and heartiness.
  • 1 piece leek, sliced Provides a mild onion-like flavor for a fragrant base.
  • 150 g mushrooms, sliced Earthy, umami-flavored mushrooms that add depth.
  • 200 ml heavy cream Luscious cream that creates a rich, velvety sauce.

Instructions

Preparation

  • Begin by boiling salted water in a large pot. Add the macaroni and cook until al dente, according to package instructions. Once done, drain the pasta and set it aside.
  • In a large frying pan, heat a splash of butter or olive oil over medium heat. Add the sliced leek and mushrooms, sautéing until they soften and turn golden.
  • Gently fold in the cooked chicken strips, allowing them to heat through for a couple of minutes.
  • Pour in the heavy cream and stir well to combine all the ingredients. Let the mixture simmer for about 3–4 minutes, allowing it to thicken slightly.
  • Add the drained pasta to the pan and toss it well with the creamy chicken mixture. Season with salt and pepper to taste.
  • Preheat your oven to 375°F (190°C). Transfer the pasta mixture to a baking dish, sprinkling extra cheese on top if desired. Bake for 15–20 minutes, or until the top is golden and bubbling.

Notes

Choose the right pasta or substitute with other short pasta shapes for different textures. Add extra veggies for nutrition and consider using different cheeses for enhanced flavor. You can assemble the casserole in the morning and refrigerate it to bake fresh in the evening.
