Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • Lightly spray a 12-cup muffin tin with cooking spray. Warm the tortillas slightly, cut them into circles about 4 inches wide, and press them into each muffin cup, forming a shell.

Cooking

  • Heat olive oil in a skillet over medium heat. Add ground beef or turkey, and cook until browned. Drain excess fat.
  • Mix in taco seasoning, tomato sauce, and water, then stir together and let it simmer for about 3–4 minutes until thickened.

Assembly and Baking

  • Spoon 2–3 tablespoons of the seasoned meat into each tortilla cup, then sprinkle cheddar cheese generously on top.
  • Bake for 10–12 minutes, until edges are golden and cheese is melty.

Serving

  • Let the Taco Cupcakes cool slightly. Top each with a dollop of sour cream, and finish with red onion, diced tomato, green bell pepper, and cilantro if desired.
