Ingredients

For the Patties

For the Tahini Dressing

  • 1/3 cup tahini Provides a unique flavor and richness.
  • 2 tbsp fresh lemon juice Adds a zesty kick.
  • 1 tbsp apple cider vinegar Balances the creaminess of the tahini.
  • 1 tsp maple syrup or honey Adds a touch of sweetness.
  • 1 clove garlic, finely grated Enhances the garlic flavor.
  • 2–4 tbsp water (to thin) Adjust according to desired dressing consistency.

Instructions

Preparation

  • Boil sweet potatoes and red lentils in water until tender, approximately 15–18 minutes. Drain well and let them cool.
  • Mash the mixture in a large bowl until mostly smooth, leaving some texture for heartiness.
  • Mix in the chopped onion, minced garlic, ground cumin, smoked paprika, ground turmeric, and salt and pepper to taste. Add fresh herbs.
  • Stir in the chickpea flour until a moldable dough forms. Adjust flour as needed.
  • Form into 8–10 round patties and chill in the refrigerator for 15–20 minutes.

Making the Dressing and Cooking

  • Whisk together tahini, lemon juice, apple cider vinegar, maple syrup, grated garlic, salt, cayenne, and enough water to achieve desired consistency.
  • Heat olive oil in a skillet over medium heat and cook patties for 3–4 minutes per side until golden brown and crisp.
  • Drizzle the cooked patties with tahini dressing, add desired toppings, and enjoy hot.

Notes

Make ahead: Prepare the patty mixture in advance and store it in the refrigerator. For a healthier version, bake at 375°F (190°C) on a lined baking sheet for about 25 minutes. Customize spices or adjust texture as needed.
