Instructions

Creating the Dough

  • Combine water, unsalted butter, brown sugar, and salt in a medium saucepan and bring to a gentle simmer.
  • Once simmering, stir in the mashed sweet potato until well mixed.
  • Add the all-purpose flour and stir vigorously until the dough forms a smooth ball.

Incorporate Eggs and Cinnamon

  • Transfer the dough to a mixing bowl and let it cool slightly.
  • Beat in the eggs one at a time until the dough is silky and glossy.
  • Stir in the ground cinnamon.

Preparing for Frying

  • Spoon dough into a piping bag fitted with a star tip.
  • Pipe logs of dough on a parchment-lined tray and chill for 15 minutes.

Frying the Churros

  • Heat the oil to 180°C (350°F).
  • Fry churros in batches for about 3–4 minutes until puffed and golden.
  • Drain on paper towels to absorb excess oil.

Coating in Cinnamon Sugar

  • While warm, roll churros in cinnamon sugar until thoroughly coated.

  • Whisk together the goat cheese and salted caramel until smooth.
