Serving Mix

Instructions

Preparation

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Toss the carrots with olive oil, salt, and pepper. Spread the carrots out on the sheet in a single layer.

Cooking

  • Roast the carrots for about 25–30 minutes, flipping them once halfway through.
  • In a saucepan, whisk together the gochujang, honey, soy sauce, rice vinegar, sesame oil, and grated garlic. Heat over medium for about 2–3 minutes.
  • In a small bowl, mix Greek yogurt with lemon zest, garlic powder, and a pinch of salt. Spread this on your serving platter.
  • Once roasted, toss the carrots gently in the warm glaze until they’re fully coated.
  • Layer the glazed carrots over the yogurt base.
  • Sprinkle with toasted sesame seeds, fresh cilantro, and optional scallions or chili.

Serving

  • Serve immediately, warm or at room temperature.
