Instructions

Preparation

  • Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
  • In a mixing bowl, combine the graham cracker crumbs and melted butter. Press into the bottom of the prepared pan and bake for 10 minutes. Let it cool.
  • In a large bowl, beat the cream cheese until smooth. Add sugar and mix well. Gradually beat in sour cream and vanilla extract, then add eggs one at a time, beating well after each addition. Fold in diced strawberries.
  • Pour the cheesecake batter into the cooled crust, spreading it evenly.

Baking

  • Bake the cheesecake for 60-70 minutes, or until the center is set and edges slightly browned.
  • Turn off the oven and leave the cheesecake to cool inside with the door slightly ajar for 1 hour.
  • Refrigerate for at least 4 hours or overnight before removing from the pan.

Strawberry Topping

  • In a saucepan, mix sliced strawberries, sugar, cornstarch, and water. Cook over medium heat until the mixture thickens. Let cool before spreading on the cheesecake.

Serving

Notes
