Ingredients

For the Filling

  • 1 cup fresh strawberries, diced Juicy and aromatic
  • 1/4 cup granulated sugar Enhancing the sweetness of strawberries
  • 1 tbsp cornstarch Thickening agent for filling
  • 1/2 tsp vanilla extract For flavor enhancement
  • 1/2 tsp lemon juice Balances sweetness

For the Pastry

  • 2 pieces refrigerated pie crusts Golden and flaky
  • 1 egg for egg wash Creates a glossy finish
  • 1 tbsp water For egg wash

For the Glaze

  • 1 cup powdered sugar Adds sweetness
  • 2 tbsp milk For glaze consistency
  • 1/2 tsp vanilla extract Final flourish of flavor

Instructions

Prepare the Filling

  • In a small saucepan over medium heat, combine diced strawberries, granulated sugar, cornstarch, vanilla extract, and lemon juice. Stir continuously until thickened, about 5 minutes. Remove from heat and let cool.

Assemble the Hand Pies

  • Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper. Roll out pie crusts on a floured surface and cut into heart shapes using a cookie cutter.
  • Place half of the heart cutouts on prepared baking sheet, spoon a small amount of cooled filling into each, and top with remaining shapes. Seal edges with a fork.
  • Whisk together egg and water for egg wash, and brush over topped pies.

Bake & Glaze

  • Bake in the preheated oven for 15-18 minutes until golden brown. Allow to cool for 10 minutes.
  • Prepare the glaze by whisking together powdered sugar, milk, and vanilla until smooth. Drizzle over cooled pies.

Notes

Serve with ice cream or whipped cream. Perfect for picnics, parties, or as a romantic gesture.
