Ingredients

For the Cake

  • 1 box strawberry cake mix Provides the rich flavor of strawberry.
  • 1 3 oz package strawberry gelatin Enhances berry flavor and adds moisture.
  • 4 large eggs Helps bind the ingredients together.
  • 1/2 cup vegetable oil Adds moisture and richness.
  • 1/4 cup milk Contributes to the cake’s moistness.
  • 1 cup mashed fresh strawberries Provides natural sweetness and texture.

For the Glaze

  • 2 cups powdered sugar Essential for creating the smooth glaze.
  • 3 tbsp strawberry puree Deepens flavor of the glaze.
  • 1 tbsp lemon juice Brightens the glaze and balances sweetness.
  • Optional pink gel food coloring For an extra pop of color.

Instructions

Preparation

  • Preheat your oven to 175°C (350°F) and grease and flour a 9x13 inch pan.
  • In a large bowl, combine the strawberry cake mix, strawberry gelatin, eggs, vegetable oil, milk, and mashed strawberries. Mix until smooth.
  • Pour the batter into the prepared pan.

Baking

  • Bake in the preheated oven for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  • Let the cake cool completely in the pan.

Glazing

  • In a bowl, whisk together powdered sugar, strawberry puree, and lemon juice until smooth.
  • If desired, add a couple of drops of pink gel food coloring.
  • Once the cake is cooled, pour the glaze evenly over the top.
  • Let it set slightly before garnishing with halved strawberries.

Serving

  • Cut into squares and serve chilled or at room temperature.

Notes

For an elevated presentation, add fresh mint leaves as a garnish. Consider folding in mini chocolate chips for an indulgent twist.
