Instructions

Preparation

  • In a large bowl, beat the cream cheese until smooth. Add the instant pudding mix and cold milk, mixing until thickened.
  • Gently fold in the whipped topping.

Layering

  • In a 9x13 inch dish, layer a single layer of graham crackers at the bottom.
  • Spread half of the cream filling over the crackers, followed by a scattering of sliced strawberries.
  • Add another layer of graham crackers, then spread the remaining filling over this layer, topped with more strawberries.
  • Finish with a final layer of graham crackers.

Frosting

  • Warm the heavy cream in a small saucepan over low heat until simmering.
  • Pour over white chocolate chips in a bowl. Let sit for two minutes, then stir until smooth.
  • Mix in strawberry extract and pink food coloring.

Chill

  • Spread frosting over the top layer of graham crackers and refrigerate for at least six hours, preferably overnight.

Serve

  • Cut into squares and enjoy chilled, topping each piece with extra strawberries if desired.
