Instructions

Cooking the Steak

  • Season the steak generously with salt, pepper, and optional chili powder or cumin. Preheat your grill or skillet over medium-high heat. Sear the steak for about 4–5 minutes on each side to your desired doneness. Let it rest for a few minutes before slicing thinly against the grain.

Roasting the Corn

  • While the steak rests, grill or pan-roast the corn until slightly charred. Allow to cool, then slice the kernels off the cob.

Making the Sauce

  • Blend cilantro, sour cream or Greek yogurt, lime juice, garlic, olive oil, and salt in a food processor until smooth. Adjust consistency with water or extra lime juice if needed.

Assembling the Bowls
