Ingredients

For the Skewers

  • 3 cups watermelon, juicy red cubes Choose ripe watermelon for optimal sweetness.
  • 200 g feta cheese Select high-quality, preferably brined feta.
  • Wooden pieces cocktail skewers Essential for assembling the skewers.

For the Mint-Chili Syrup

  • 2 tbsp honey or agave Natural sweetness to complement spicy notes.
  • 1 juice lime Bright acidity to cut through richness.
  • 1 small red chili, finely chopped Adjust heat level as desired.
  • 1 tbsp water Helps to blend and soften the syrup.
  • 1 tbsp fresh mint, finely chopped Brings freshness and color to the skewers.

Instructions

Create the Mint-Chili Syrup

  • In a small saucepan, combine honey, lime juice, chopped chili, and water. Simmer over medium heat for 2-3 minutes, stirring occasionally to blend flavors.
  • Remove from heat and fold in finely chopped mint. Allow the syrup to cool completely.

Assemble the Skewers

  • Thread watermelon cubes and feta onto wooden skewers, alternating between the two ingredients for a colorful presentation.

Serve with Style

  • Arrange skewers on a platter and drizzle cooled mint-chili syrup over them just before serving.
  • For an extra-refreshing twist, chill skewers in the refrigerator for about 10 minutes before serving.

Notes

Avoid using pre-cut watermelon to retain moisture and flavor. Ensure feta pieces are uniform in size for balance while eating. Let the syrup cool to prevent soggy skewers. You can make this ahead of time and refrigerate.
