For the quesadilla

  • 4 large flour tortillas Soft and pliable.
  • 2 cups shredded cheddar or American cheese Creates gooey layers.
  • 1 small onion, finely chopped Adds flavor and sweetness.
  • 1 tablespoon butter or oil Used for caramelizing onions.

For the sauce

  • 1/2 cup mayonnaise Gives a luxurious touch.
  • 1 tablespoon ketchup Balances richness.
  • 1 tablespoon mustard Adds a zesty punch.
  • 1 teaspoon pickle juice Adds tang.

Instructions

Preparation

  • Divide the ground beef into four portions and roll them into loose balls.
  • Heat a cast-iron pan over high heat until sizzling hot.
  • Smash the beef balls flat in the pan and cook for 2–3 minutes until a crispy crust develops.
  • Season beef with salt, black pepper, garlic powder, and smoked paprika. Flip and cook for another 2–3 minutes.

Caramelization

  • Reduce heat to medium and melt butter or oil in the same pan.
  • Add finely chopped onions and simmer for 8–10 minutes until golden brown.

Assembly

  • On a heated pan, place one tortilla and sprinkle half a cup of shredded cheese on top.
  • Layer with a smash burger patty and caramelized onions.
  • Drizzle with homemade sauce and finish with another layer of cheese and another tortilla.

Cooking

  • Cook the quesadilla for 2–3 minutes per side until golden and crispy, pressing down with a spatula.

Serving

  • Allow the quesadilla to rest, then slice into quarters.
  • Serve warm with extra sauce for dipping.

Notes

For a healthier option, use lean turkey or chicken, whole wheat tortillas, and low-fat cheese. Add vegetables for more nutrition.
