Ingredients

For the Brisket

  • 1 cup beef stock Ensures the brisket stays moist and flavorful during cooking.

  • ½ teaspoon dried thyme An earthy herb that complements the meat.
  • ½ teaspoon dried rosemary Lightly aromatic, contributes subtle pine flavor.
  • ½ teaspoon black pepper A classic seasoning that enhances the overall taste.
  • 1 tablespoon honey Naturally sweet, helps finish the gravy beautifully.

Instructions

Preparation

  • Heat the olive oil in your slow cooker or in a large skillet over medium-high heat.
  • Sear the brisket for 3-4 minutes on each side until browned.
  • Remove the brisket and set it aside.

Cooking Onions & Garlic

  • In the same pot, add sliced onions and minced garlic.
  • Sprinkle with salt and sauté for approximately 4 minutes until soft and translucent.

Making the Sauce

  • Pour in balsamic vinegar and beef stock, and add dried thyme, rosemary, and black pepper.
  • Stir to mix and return the seared brisket to the slow cooker.

Slow Cooking

  • Cover the slow cooker and set it on LOW for 9-10 hours or HIGH for about 4 hours.

Preparing Gravy

  • Remove the brisket and place it on a cutting board.
  • Transfer the onions and sauce into a saucepan over high heat.
  • Mix in honey and allow the sauce to reduce and thicken for about 8-10 minutes.

Serving

  • Slice the brisket against the grain into ½-inch thick slices.
  • Serve with balsamic onion gravy on top.

Notes

Sear the brisket for added flavor, and feel free to include carrots or potatoes in the slow cooker for a more complete meal.
