Ingredients

Instructions

Preparation

  • Heat the olive oil in a skillet over medium-high heat. Once hot, sear the brisket on all sides for about 2-3 minutes per side until it develops a rich brown crust.
  • Transfer the brisket to your slow cooker.
  • In the same skillet, add the sliced onion and minced garlic. Cook for about 3-4 minutes, stirring frequently, until they have softened and turned fragrant.
  • Add the beef stock, BBQ sauce, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, and thyme to the skillet. Stir well and let everything simmer for a couple of minutes.
  • Pour the sauce over the brisket in the slow cooker, ensuring it’s well-coated, and season with salt and pepper to taste.

Cooking

  • Cover the slow cooker and cook on low for about 8-10 hours until the brisket is tender.
  • Once finished, let the brisket rest for approximately 10 minutes before slicing it against the grain.
  • Serve the slices with the sauce from the slow cooker.

Notes

For optional extras, consider adding some sliced bell peppers or additional spices like cayenne for heat. For quicker cooking, use the high setting on your slow cooker, which takes about 4-5 hours. Always sear your brisket for added flavor.
