Instructions

Preparation

  • In a large pot, heat 1 tablespoon of olive oil over medium heat.
  • Add 1 lb of ground beef and cook until browned, breaking it apart with a spoon. Drain excess grease if necessary.
  • Toss in 1 diced onion, 2 chopped carrots, and 2 chopped celery stalks. Cook for about 5-7 minutes until softened.

Cooking

  • Pour in 4 cups of beef broth, then add 1 tablespoon of Worcestershire sauce, 1 teaspoon of dried thyme, 1/2 teaspoon of salt, and 1/2 teaspoon of black pepper. Bring to a gentle boil.
  • Reduce heat and allow to simmer for 20-25 minutes.
  • Stir in 1 cup of frozen peas and cook for an additional 5 minutes.
  • Serve the soup in bowls topped with 2 cups of prepared mashed potatoes.
  • Garnish with fresh parsley and enjoy!

Notes
