Instructions

Cooking

  • Heat olive oil in a large skillet over medium heat. Allow the oil to get hot but not smoking.
  • Add the chopped onion and sauté for about 3-4 minutes until softened and translucent.
  • Stir in the minced garlic and cook for 1 additional minute until fragrant.
  • Add the ground turkey, breaking it apart with a spatula. Brown the turkey for approximately 5-7 minutes until fully cooked.
  • Stir in the diced zucchini, chickpeas, ground cumin, smoked paprika, salt, and black pepper. Mix everything well and let cook for another 5-7 minutes until the zucchini is tender.
  • Remove from heat and sprinkle with fresh parsley before serving warm.

Notes

Consider adding a splash of lemon juice right before serving for extra flavor. You can also toss in other seasonal vegetables like bell peppers or spinach.
