Ingredients

For the Churros

  • 125 ml water Perfect for bringing the dough together.
  • 50 g unsalted butter Adds a rich, creamy layer.
  • 65 g all-purpose flour Foundation for our churros.
  • 2 large eggs Enhances the structure and fluffiness.
  • 40 g grated Parmesan Sharp and nutty cheese.
  • 1/2 tsp freshly cracked black pepper Adds subtle heat.
  • 1 pinch salt Harmonizes flavors.
  • neutral oil for frying Essential for achieving golden crunch.
  • 30 g finely grated Parmesan For dusting.
  • 1 tsp garlic powder Infuses warmth.
  • 1/4 tsp smoked paprika Adds a gentle smokiness.

For the Whipped Burrata Dip

  • 1 whole burrata (about 125g) Luxuriously creamy.
  • 50 g cream cheese Contributes to a rich texture.
  • 1 tbsp Greek yogurt Adds a refreshing tang.
  • 1/2 lemon zest Bright burst of flavor.
  • 1 pinch salt and pepper Rounds out flavor profile.

Instructions

Make the choux dough

  • Place 125ml of water and 50g of unsalted butter in a saucepan over medium heat. Melt the butter fully, then add 65g of all-purpose flour, stirring until a dough ball forms. Remove from heat and let cool for a couple of minutes.

Add flavor & eggs

  • Beat in the eggs one at a time, mixing well after each addition until the dough is glossy. Fold in the 40g of grated Parmesan, 1/2 tsp black pepper, and a pinch of salt.

Pipe & fry

  • Heat neutral oil to 180°C (350°F). Spoon dough into a piping bag and pipe into hot oil in 10–12 cm lengths. Fry for 2-3 minutes until golden. Remove and place on paper towels.

Dust the churros

  • Mix 30g of finely grated Parmesan, 1 tsp garlic powder, and 1/4 tsp smoked paprika. Roll warm churros in this mixture to coat.

Make whipped burrata

  • Blend burrata, cream cheese, Greek yogurt, lemon zest, and a pinch of salt and pepper in a food processor until smooth and airy.

Serve immediately

  • Arrange churros on a platter and serve with the whipped burrata dip in a bowl for sharing.

Notes

Ensure oil is hot enough for frying. Cool dough before adding eggs to prevent scrambling. Use parchment paper for piping.
