Ingredients

For the Burger Mixture

  • 1.5 cups cooked lentils (green or brown) A nutritious base that adds fiber and protein.
  • 0.5 cup finely chopped onion Adds a sweet and tangy flavor.
  • 0.5 cup finely diced red bell pepper Brings a touch of sweetness and color.
  • 2 cloves garlic, minced Infuses a rich depth of flavor.
  • 1 tbsp fresh parsley, chopped Offers a burst of freshness.
  • 1 large egg (or flax egg for vegan) Acts as a binder in the mixture.
  • 0.25 cup grated Parmesan (or nutritional yeast for vegan) Adds a cheesy richness.
  • 0.5 cup breadcrumbs (panko or whole wheat) Provides texture and helps hold the patties together.
  • 0.5 tsp smoked paprika Infuses a subtle, smoky flavor.
  • 0.5 tsp salt Enhances the overall taste.
  • 0.5 tsp dried thyme Earthy herbal notes that complement the mushrooms.
  • 2 tbsp olive oil for cooking For that perfect golden-brown crispness.

Instructions

Preparation

  • In a skillet over medium heat, heat 1 tablespoon of olive oil. Add the chopped onions, diced red bell peppers, and minced garlic. Sauté until the vegetables become soft and fragrant, about 5-7 minutes. Set aside to cool.
  • In a large mixing bowl, mash the cooked lentils slightly. It's important to leave some texture for heartiness. Then incorporate the sautéed vegetable mixture, fresh parsley, egg (or flax egg for a vegan option), grated Parmesan (or nutritional yeast), breadcrumbs, and spices. Mix everything together until well combined but ensure not to over-mix.
  • Divide the mixture into equal portions and shape them into burger patties, each about 1⁄2-inch thick.

Cooking

  • In the same skillet, add the remaining tablespoon of olive oil. Once hot, carefully place the patties in the skillet. Cook each burger for approximately 4-5 minutes on each side, until they are crispy and golden brown.

Serving

  • Serve your savory lentil burgers on a toasted bun topped with avocado, sautéed mushrooms, and crisp lettuce, or enjoy them as a protein-packed side dish alongside a fresh salad.

Notes

Ensure that your lentils are cooked thoroughly, but not mushy. Let your patties rest briefly after cooking to maintain their juiciness. Experiment with variations by adding spices like cumin or coriander, or swap out the veggies.
