Instructions

Preparation of Filling

  • In a mixing bowl, whip together the goat cheese and cream cheese until light and airy.
  • Stir in the chopped sage, lemon zest, salt, and black pepper until well combined.
  • Chill the filling in the fridge for about 20 minutes to help it firm up slightly.

Making the Dough

  • In another bowl, combine the mashed sweet potato with glutinous rice flour, olive oil, and salt.
  • Mix thoroughly until it forms a soft, pliable dough. If too dry, gradually add warm water until desired texture is achieved.

Shaping the Mochi

  • Divide the dough into 8 equal pieces and flatten each into a disc shape.
  • Spoon a generous amount of the chilled goat cheese filling into the center of each disc.
  • Carefully seal the edges and roll the filled dough into a ball.

Steaming the Mochi

  • Line a steamer basket with parchment paper squares and place the mochi balls on top.
  • Steam for 8-10 minutes, or until they become glossy and set to touch.

Cooling and Serving

  • Let the mochi rest for about 5 minutes after steaming.
  • Serve warm or at room temperature and garnish as desired.
