Instructions

Preparation

  • Preheat your oven to 150°C (300°F).
  • In a mixing bowl, blend the fresh goat cheese and heavy cream until smooth and well combined.
  • Divide the mixture into ramekins.
  • Place the ramekins in a baking dish and fill the dish with hot water halfway up the sides of the ramekins.
  • Bake for about 25-30 minutes or until the custard is set but still has a slight jiggle in the center.
  • Remove from the oven and let them cool down to room temperature, then refrigerate for at least 2 hours.
  • Once chilled, sprinkle a thin layer of sugar on top of each custard.
  • Use a kitchen torch to caramelize the sugar until it forms a golden, crispy crust.
  • Serve the crème brûlée with a spoonful of fig chili jam on top.

Notes

Ensure you sprinkle the sugar evenly and caramelize it slowly for the best texture. Replace heavy cream with coconut cream for a lighter option.
