Instructions

Cook the Orzo

  • Melt 1 tablespoon of butter in a saucepan over medium heat.
  • Once melted, stir in the orzo and toast it for about 2 minutes, allowing it to turn golden.
  • Pour in the chicken broth and bring it to a boil.
  • Once boiling, lower the heat and cover to let it simmer.
  • Cook for 8-10 minutes, stirring occasionally until the orzo is tender.
  • Mix in minced garlic, lemon zest, lemon juice, the remaining butter, Parmesan cheese, salt, and pepper.
  • Cover and keep warm.

Cook the Salmon Bites

  • Toss the salmon cubes with olive oil, garlic powder, paprika, salt, and pepper until well coated.
  • Heat a nonstick skillet over medium-high heat and add the salmon.
  • Sear each side for 2-3 minutes, until golden and cooked through.
