Preparation

  • In a large bowl, combine all-purpose flour, minced garlic, finely chopped rosemary, kosher salt, ground black pepper, and instant yeast. Whisk together until blended.
  • Pour in room temperature water and stir until a sticky dough forms.
  • Cover the bowl with plastic wrap and allow the dough to rest at room temperature for 18 to 24 hours.

Baking

  • Lightly oil a 10-inch cast iron skillet and dust it with cornmeal.
  • Turn the risen dough out onto a floured surface and shape it into a ball.
  • Place the dough into the prepared skillet and let it rise covered for an additional 2 hours.
  • Preheat your oven to 450°F (232°C).
  • Bake for 30 to 40 minutes until the crust is golden brown and sounds hollow when tapped.
  • Remove from the oven and cool for about 10 minutes before slicing.

Notes

For best flavor, use fresh garlic and rosemary. Let the dough rise fully for a more flavorful bread. You may also experiment with different herbs or add cheese to the dough for variation.
