Instructions

Preparation

  • Preheat your oven to 200°C (390°F).
  • Cut the scrubbed sweet potatoes lengthwise into 1.5–2 cm thick ‘steaks’, keeping the skin on.
  • Brush both sides with olive oil and season with salt and pepper.

Cooking

  • Place the seasoned steaks on a parchment-lined tray and roast for 25–30 minutes, turning halfway.
  • While roasting, whisk together gochujang, maple syrup, soy sauce, rice vinegar, sesame oil, and minced garlic in a small bowl.
  • Once the sweet potatoes are done, brush them with the glaze and broil for an additional 3–5 minutes.

Serving

  • Transfer the sweet potato steaks to a serving plate, garnish with sesame seeds and scallions, and serve with lime wedges.

Notes

For best results, use fresh sweet potatoes that are firm and smooth. Don't rush the glazing process to ensure a full flavor experience.
