For Assembly and Garnish

  • 1.5 tsp Hot Honey Creates a sweet and spicy drizzle.
  • 1 tbsp Chopped Pistachios Optional; for added crunch.

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, toss the halved carrots with olive oil, fresh thyme, and salt.

Roasting

  • Spread the carrots out on a baking sheet lined with parchment paper.
  • Roast the carrots for 20–30 minutes or until tender and caramelized, turning them halfway.

Preparing the Whipped Ricotta

  • In a blender, combine ricotta cheese, olive oil, lemon zest, lemon juice, and a pinch of salt. Blend until smooth and fluffy.

Assembly

  • Spread the whipped ricotta onto a serving dish and place the warm roasted carrots on top.
  • Drizzle hot honey generously over the carrots and sprinkle with extra thyme or chopped pistachios if desired.

Notes

For best results, choose fresh, seasonal carrots. If you want a milder flavor, use regular honey mixed with chili flakes instead of hot honey.
