Ingredients

For the Log

Instructions

Roasting the Beets

  • Preheat your oven to 400°F (200°C). Toss the cleaned and trimmed beets in olive oil until evenly coated. Wrap each beet in foil to lock in moisture and arrange them on a baking sheet.
  • Roast for 45 to 60 minutes, depending on their size, until tender when pierced with a fork. Once roasted, let cool slightly, peel off the skins, and grate the beets.

Mixing the Cheese

  • In a mixing bowl, combine the softened goat cheese, grated beets, honey, garlic powder, and black pepper. Mix until smooth and well blended.

Shaping the Log

  • Lay out a sheet of plastic wrap and spoon the goat cheese and beet mixture onto it, forming a log shape. Roll tightly using the plastic wrap and twist the ends, then refrigerate for at least one hour.

Adding the Coating

  • Combine the chopped pistachios and parsley in a bowl. Unwrap the log and gently roll it in the mixture until fully covered.

Serving

  • Slice the log into rounds and serve on a platter with crispy crackers, crostini, or colorful veggie sticks.

Notes

For a quicker option, use pre-cooked beets. Elevate the flavor with a dash of lemon juice or zest, and consider fresh herbs like dill or thyme for a unique twist. The log can be made a day in advance and stored in the fridge.
