Instructions

Preparation

  • Preheat your oven to 400°F (200°C). Begin by preparing your beets for roasting.
  • Wrap the beets in foil and place them in the oven; roast for 45 to 60 minutes until tender. You can check doneness by inserting a knife; it should easily slide in.
  • Cool the roasted beets completely before peeling and finely dicing them.
  • In a mixing bowl, combine the goat cheese, chives, dill, garlic powder, salt, pepper, and lemon juice. Mix well until you have a smooth blend.

Assembly

  • Prepare a clean surface and lay down a sheet of plastic wrap.
  • Spread the cheese mixture into a rectangle on the plastic wrap, about 1/2 inch thick.
  • Sprinkle the diced beets (and optional walnuts or cranberries) evenly over the cheese mixture.
  • Carefully roll the cheese and beets into a log using the plastic wrap, ensuring a tight seal.

Chilling

  • Chill in the fridge for at least 1 hour to firm up before serving.
  • Slice and serve the log with an assortment of crackers, bread, or fresh veggie sticks.
