  • 3 medium medium beets, roasted and sliced Roast until tender, about 45–50 minutes.

Instructions

Roasting the Beets

  • Preheat your oven to 400°F (200°C). Wrap whole, unpeeled beets in aluminum foil and roast for about 45–50 minutes until fork-tender.
  • Let them cool, peel away the skins, and slice into 1/2-inch thick rounds.

Sautéing the Pears

  • In a medium skillet, heat olive oil over medium heat. Add thin pear slices and sauté until lightly golden.
  • Drizzle with honey and sauté for an additional 2 minutes.

Building Layers

  • On a plate, layer a slice of beet, followed by blue cheese and a slice of caramelized pear. Repeat the layers, finishing with blue cheese on top.

Finishing Touches

  • Sprinkle with toasted pecans, drizzle balsamic glaze, and garnish with fresh thyme. Serve immediately.

Notes

For best results, use fresh beets and avoid overly ripe pears. This dish can also be served warm if desired.
