  • 1/4 cup toasted pecans Crunchy and nutty, these pecans provide a satisfying contrast.
  • 1 tbsp honey Adds a touch of natural sweetness.
  • 1 tbsp balsamic glaze Adds a tangy sweetness.
  • 1 tbsp olive oil Used for sautéing.

Instructions

Preparation

  • Preheat your oven to 400°F (200°C). Wrap the beets in foil and place them on a baking sheet. Roast them for 45-50 minutes or until tender.
  • Once roasted, allow the beets to cool, then peel them and slice into 1/2-inch rounds.
  • In a medium pan, heat the olive oil over medium heat. Add thinly sliced pear and drizzle with honey. Cook for about 2 minutes on each side until golden and caramelized.

Assembly

  • On a serving dish, layer a beet slice, followed by crumbled blue cheese and caramelized pear. Repeat this pattern until all ingredients are used.
  • Finish with a layer of blue cheese on top.

Garnishing

  • Sprinkle toasted pecans and fresh thyme sprigs over the towers. Drizzle with balsamic glaze just before serving.

Notes

Roasting beets before peeling makes them easier to handle. Substitute blue cheese with goat cheese or feta for different flavors. Toasting the pecans enhances their flavor.
