Preparation

  • In a small pot, combine the chopped rhubarb, grated ginger, sugar, and water. Stir gently to mix the ingredients.
  • Place the pot over medium heat and bring the mixture to a gentle simmer. Allow it to simmer for about 10 minutes until the rhubarb has softened significantly.
  • Once softened, remove the pot from the heat and strain the mixture through a fine sieve to separate the liquid from the rhubarb pulp. What you have left is a vibrant, fragrant syrup.
  • Let the syrup chill in the fridge for a bit, allowing those lovely flavors to develop even further.
  • When you’re ready to serve, fill a glass with ice cubes and pour in the chilled rhubarb syrup, filling it about halfway.
  • Top the glass with sparkling water or tonic for that fizzy finish, giving it a gentle stir to combine everything.
  • Garnish your Rhubarb Ginger Fizz with lime wedges and a sprig of fresh mint.

Notes

Use fresh rhubarb for the best flavor. The rhubarb syrup can be made in larger batches for parties; it keeps well in an airtight container in the fridge for about a week. For variations, consider adding other fruits to the syrup.
